Carrot and Radish/ Daikon Chicken Soup

The weather is hot, humid and dry. So, I bought a white long radish since I have chicken, carrots and red dates in the fridge. Red dates give the sweet taste and it's healthy; good for blood circulations. White radish good for everyone especially those who are smoking, working in air polluted environment and for those who used it for detoxing and cooling purposes.

For me, this comfort food really quench my thirst and filling. I have it with a bowl of rice...... ohhhh yummmyyy!!!!! I plan to cook again since it's healthy. SO, ok let's see the ingredients.


 Ingredients:
1 white radish/ daikon; cut into small size bites
1 carrot; cut into small pieces
chicken thigh / chicken breast; cut into small size
2-3 pcs chinese red dates; washed, soaked, and cut half
2-3 cups of water; preferences
salt for taste

Method:
  1. Fill up a pot of water and blanched the chicken pieces first to remove the fat. Once it is half-cooked, the white color fat will float up to the surface. Switch of the fire and pour away the liquid including the white fat. If the chicken fats balance remains in the chicken or inside the pot, rinsed it till cleared.
  2. Using the same pot, fill up some water and turn to high heat. Once the water boils, turn to medium heat and add blanched chicken with other ingredients except salt for 1-2 or more hours. 
  3. Add more water if reduces. Check the radish and carrot from time to time. Use a fork to check the softness.
  4. Add salt for preference taste. Mix well. Turn off the fire.
  5. Serve hot with rice.
